Apricot season has begun and as it is such a short season, we wanted to enjoy as many recipes as possibly using these delicious fruits. We came across this delicious recipe through a post on Rodale’s OrganicLife.
It uses curried lentils, arugula, red bell peppers and spring onions. It’s a delicious mixture of flavors. It’s good warm or cold. Next time I will double the amount and we will have it as a main meal salad.
