This vegan Italian dressing is hands down our new favorite salad dressing! It is perfectly balanced with fresh ingredients and tastes absolutely delicious.
We used simple, fresh ingredients that really make the flavors of this salad dressing stand out. You get the richness from the olive oil, the ‘cheesy flavor’ from the nutritional yeast and Dijon mustard. While the vinegar, lemon juice and maple syrup create the perfect balance between sweet and tangy. Add in your fresh herbs and garlic and you have the perfect salad dressing!

How to make Vegan Italian Dressing

- Place the olive oil, white wine vinegar, lemon juice, maple syrup, Dijon mustard, sea salt, black pepper, and nutritional yeast into a small mixing bowl or measuring jug.
- Whisk together until emulsified.
- Add the crushed garlic and all the fresh herbs to the mixture.
- Gently whisk until well mixed. Do not whisk vigorously otherwise you may liquify the herbs.
- Enjoy your vegan Italian Dressing!
Fresh herbs vs Dried Herbs
We tested this recipe with both fresh and dried herbs, and the fresh herbs won by far! We found that the flavors of the dressing are elevated when using the fresh herbs.
However, you can substitute the fresh herbs with 1 teaspoon each of dried herbs if you do not have any fresh ones on hand.
Storing Tips
Keep leftovers stored in an airtight container, like a mason jar, in the fridge where it will stay good for up to 5 days.
It’s not ideal for freezing.
