Over the Christmas holidays, we went back east to visit our moms. One day, Jane’s mom us each a baked potato. I actually hadn’t had one in years. I know what you’re thinking… those are just vehicles for fat: sour cream, butter, etc. We didn’t doctor them much… just a little butter, vegan of course. Well, they were warm and fluffy. Yum!
