This was a delicious treat we enjoyed today as a mid-day snack. We found it on the SpoonSense food blog, created by Sabine. We often enjoy rice pudding, but this was the first time with a nut topping. It was really delicious.
Our beechnut tree has had many nuts this year and I was excited to harvest them. Well, I will tell you it is a lot of work, getting those nuts out of the shell, and then out of the woody skin, and I will say, that although delicious, I think next time I will use walnuts. Actually any toasted nuts with the maple syrup will be delicious over the rice pudding. I do hope you make the recipe and enjoy it with your favorite nuts.
